Variations on a theme

I made these lovely pear and walnut muffins ages ago, and they were delish. Recently, I have added a couple variations on the theme;




Apple, sultana, walnut and cinnamon;

1.5 cups of wholemeal spelt flour
3 tsps baking powder
1/4 cup of honey
1 cup of milk (any milk of your choice)
60g butter (might fiddle around with it later to see if I could use coconut oil or some such)
1 apple (cut into small pieces)
1/4 cup walnuts
1/4 cup sultanas
1 tsp vanilla essence
1 tsp cinnamon

Corn, parmesan and spinach (something a bit interesting to put in Little Miss O's lunchbox)

1.5 cups of wholemeal spelt flour
3 tsps baking powder
1/4 cup of yoghurt
1 cup of milk (any milk of your choice)
60g butter (might fiddle around with it later to see if I could use coconut oil or some such)
1/2 small tin of corn
1 cup of baby spinach
1/2 cup grated parmesan
An olive to stick in the top of each one (so, twelve olives)
