Eco eater: Whey to go bread! Almost cracked it!

People, I bring you the holy grail of bread.  Organic rye flour (1 cup), organic wholemeal spelt flour (3 cups) and organic kamut flour (3 cups) with organic linseed and chia seed.  AND spread with organic peanut butter.  I used the good old whey recipe from Terri's Table again.  Look how brown and crusty delicious that is.  I fed it to Mr O with organic apricot jam, and he was LOVING it.

Now, how to reduce the amount of sugar - methinks 1/8 cup per loaf is too much?  Or am I just getting fanatical?

YUM.  Pity tomorrow is my weigh in for my progress on the 30 day shred....oops.
