What's cooking, good lookin': Banana muffins

At the end of the week, I throw weird things together to make meals so there is a limit to the amount of food that we throw away.  On a tight budget and with a careful eye on the environment, wasted food is really a big no-no in our house.  Today, I had some eggs and yoghurt that needed using up as well as some bananas and some random packets with a small amount of stuff within.  So - banana muffins;

2 tbsps of oil
2 tablespoons of molasses
1 tbsp golden syrup
2 eggs
1 tsp vanilla extract
1/2 cup plain yoghurt
2 ripe bananas
1/2 cup desiccated coconut
1 1/2 cups whole meal flour
1/4 cup sultanas
1/4 cup cranberries
3 tsps baking powder

Beat the oil, molasses, golden syrup, eggs, vanilla, yoghurt and bananas together.  Add the flour, coconut, sultanas, cranberries and baking powder and fold into the mixture.  Spoon into prepared muffin patties or tins and bake at 180 degrees celsius for 25 - 30 mins.

These go in Mr O's snack box every day.  I like to think they give him a little extra power to make it to quittin' time.
