Tuna patties


Sunday is the day when we just use up whatever is in the fridge, so dinners can be a little left of centre at times.  However, I was pretty proud of yesterday's effort, and I made up a recipe too!  Errr..and it was actually really delicious, so bonus.

Tuna patties

140g tuna
Two big handfuls of frozen edamame, shelled
95g tofu
1/2 brown onion finely chopped
A piece of less than fresh bread torn into small pieces
Squeeze of lemon
Black pepper

Whack it all into a food processor and blend it until it becomes a paste.  (This would actually be really delicious as a sandwich filling just as it is).  Or, if you are of a vol-au-vent bent, then they would make a great filling for those too.
Put a little oil into a frying pan and make sure that it is coated. Heat the pan.
Using a large spoon, put individual spoonfuls of the mixture into the pan. If you choose, use the spoon to shape them into a more round shape.
Cook until they go brown on the bottom and then flip them and do the same on the other side.
I served them with salad, yoghurt and cucumber sauce (my fave!) and fresh wholemeal pita bread.

  1. Yum yum yum, wish that edamame was easy to find in Melbourne, sadly not unless in wagamama!

    1. Did you try an Asian supermarket? They are often in the freezer section. :) YUM. Great with cold beer on a hot day.
