Breakfast Decadence

YUM.  Yum, yum, yum, yum.  Hello clogged arteries.  This is my fave thing to eat at the cafe we often go to on the weekend, so I thought I would try it at home.  For two people;

4 super thick slices of white bread
Grated cheese - enough to coat two slices of bread
One tomato, chopped into small pieces
Three eggs
1/3 cup of milk
Karashi - Japanese mustard

(see what I mean about clogged arteries?  wayhay!)

Put the tomato and cheese on to two slices of bread and put all four slices under the grill to toast (and remember to check them while doing the other steps!! Grill until toast is cooked and cheese is nice and melted and bubbly).
Crack the eggs into a bowl and mix with the milk.
Pour into a hot, oiled fry pan and scramble.
Mix eggs with mayo and karashi to taste.
Spread the egg mixture on to the bottom slice of toast (the ones without the cheese).
Top with the cheesy toast.
Slice and serve.
