Sugar-free blueberry cupcakes


My first experiment in sugar-free cooking (the first time I followed a recipe). These came out goooorrrrrgeous.

Makes 12

100g butter
1 tsp vanilla essence
4 tbsp honey
1/4 cup milk
two eggs
1 1/4 cup self raising flour
Blueberries (as many as you like - I used about.....a handful or two.  Frozen ones are fine.)

Melt butter in a saucepan with the honey and vanilla essence.
Sift flour into a large bowl and make a well in the centre.
Pour mixture from the pan into the well and mix well with a spoon.
Add eggs one at a time and mix.
Add milk and mix.
If the mixture seems too runny add a little bit of flour to thicken it up a bit.
Add blueberries.
Pour mixture into silicone patty cases or a pre-greased muffin tin.
Cook at 180 degrees for approx 18 minutes or until a skewer comes out clean when poked into centre of the cakes.
Put on wire rack to cool.
