Veggie recipes - Om-rice


Wah!  Finally worked out how to do "jump-to" on this blog.  Au revoir long blogs all on one page.  Today's recipe is not vegan, I am afraid, but still very yummy.  You will need:

1.5 - 2 eggs per person
Cooked rice (one serve per person)
Vegetables of your choice chopped finely
1 clove of garlic (per two people) - crushed
Spring onions (sliced)
A pinch or two of sugar
Black pepper
Tomato sauce
Japanese brown sauce (optional)

How to make:

First - put some oil in a frying pan and stir fry garlic until fragrant
Add veggies and sugar and stir fry until tender
Add rice and spring onions, season with black pepper and stir fry.
Remove, stir in tomato sauce to taste and keep warm
Beat eggs and then spoon (half of the mixture for two people, one third for three and so on) into the frying pan.  Swirl, so a thin layer coats the whole pan.
When one side is cooked, flip and cook the other side briefly.
Place on plate and repeat for other people's omelettes.
Fill omelettes with rice mixture, fold in sides and flip over so it looks like the picture.
Serve with tomato sauce and Japanese brown sauce.
